Macaroni and Cheese Stuffed Chicken Breasts

Cheesy grilled chicken breasts, stuffed with Macaroni and Cheese, coated and grilled to perfection! Delicious, quick and easy meal for the whole family.

Preheat oven to 180 degrees.

Cook Macaroni in water with a teaspoon salt and 2 tablespoons oil.
While the macaroni is cooking, melt butter in a pan. Once the butter has melted add the flour to make a thick paste. Slowly add milk, stirring continuously until smooth and runny. Add 150g mozzarella and 150g cheddar cheese and stir. Add salt and pepper to taste.

Drain the macaroni in a colander, one all water had been strained add cheese sauce and mix thoroughly.

Stuffed Chicken Breasts

Cut Chicken breasts from the top, avoid cutting it completely open. Place your fingers into the breast to make sure there is enough space for the macaroni filling.

Stuff breasts with the cheesy macaroni. Once stuffed place a pan with some oil on the stove. Allow the oil to heat up. Dip the breast into the flour, then dip it into the egg and lastly dip into the bread crumbs and place in the pan to fry for approximately 5 minutes. Once the batter has a golden brown and crispy texture remove from the pan and place onto an ovenproof dish. Sprinkle the remainder of the cheese over the top and place into the oven to grill.

There will be some macaroni left. Once the chicken breasts are grilled, remove them from the oven, place on a small mound of macaroni, slice avocado and place 2-3 strip on the top, drizzle with lemon juice and serve. *Stuffed breasts can also be served with a side salad.
