For this recipe, you can buy a pre-grilled chicken, you could make use of leftover chicken or you can grill your own chicken.
Because I was looking for a quick recipe for my family I bought a pre-grilled chicken and shredded it into pieces. Once the chicken is shredded add the mayo with a little salt and pepper and mix through.
Cut the crust off the edges of the bread slices and place a slice of mozzarella and cheddar cheese. Add another slice of bread on top. Dip the bread into the flour, then into the egg and lastly crumb with the bread crumbs. Heat a little bit of oil in a pan until it is a medium heat. Place the crumbed bread into the pan to fry until it is golden brown.
Once the bread is golden brown remove from the oil and place on the plate, ready to stack your sandwich. Add the chicken mayo nice and thick, cut a few slices of avo and add to the top. Top off by adding another crumbed bread on top.
Cut in half and watch the melted cheese ooze from the bread!
Enjoy! The sandwich can be served with a side salad or fries.
