
Peel and dice sweet potatoes. Place in a pot of boiling water and cook until soft.
Remove the sweet potatoes from the stove and place it into a bowl. Mash sweet potatoes until there are no lumps.
Add 1 egg, 1 tsp cinnamon, 1tsp nutmeg, 1 tsp mixed spice, 1 cup sugar and 1 tsp vanilla essence. Mix thoroughly. Place aside and allow to cool slightly.

Sweet Potato Fritters with Caramel Sauce and Ice-Cream

In a bowl place the 2 cups flour, 2 eggs, 1 cup sugar, 1 cup milk, and 1 tsp vanilla essence. Mix the mixture until smooth. The mixture must resemble pancake mixture (Add more milk if necessary)
Set aside until you are ready to start frying.
Once the sweet potato mixture has cooled slightly place a medium amount of sweet potato mixture into the palm of your hand and roll a medium-sized ball. Place the balls on baking paper and set in the fridge or freezer for +- 10 minutes.
When the balls are no longer soft place your oil on the stove on high to heat up. Once the oil is hot turn the stove down to a medium heat.
Dip the sweet potato balls into the batter and swirl around with a fork until completely covered.
Place the ball into the oil and fry until golden brown, flip over and fry on the other side.
As soon as they are done, remove from the oil and place on a paper towel to drain any excess oil.
Serve with caramel syrup and ice-cream or cream.
