Sweet Potato Fritters with Caramel Sauce and Ice-CreamPeel and dice sweet potatoes. Place in a pot of boiling water and cook until soft. Remove the sweet potatoes from the stove and place it into a bowl. Mash sweet potatoes until there are no lumps. Add 1 egg, 1 tsp cinnamon, 1tsp nutmeg, 1 tsp mixed spice, 1 cup sugar and 1 tsp vanilla essence. Mix thoroughly. Place aside and allow to cool slightly.
